Epicure Episode 14: Learn to Love the Brussels Sprout!
Have you ever been a victim of Brussels sprouts? In the latest installment of EpiCURE, Chef Patrick O’Connell, Dr. Khashayar Vaziri, and On The Marc Media’s own Marc Silverstein readily acknowledge that the little green veggies have a bad reputation. Often, they are overcooked and become sulfurous, contributing to their unique smell and slimy taste. Chef O’Connell, of world-renowned Inn at Little Washington, offers a delicious alternative with his blanched Brussels sprout petals with coriander vinaigrette and pickled cranberries.
In the video, Chef Patrick O’Connell adds seared scallions to the sprouts and recommends that the dish could easily be paired with any protein or could be eaten alone as a salad. Dr. Vaziri, a surgeon with GW MFA, adds his stamp of approval for its healthy and natural ingredients.
