Cooking For A Neutropenic Diet
If you are a cancer patient undergoing chemotherapy treatment, or just a health conscious consumer, you may want to consider a neutropenic diet to reduce unwanted infections. In the latest episode of Epicure, Dr. Lisa McGrail, an oncologist at the GW Medical Faculty Associates, teamed up with Chef Robert Wiedmaier, the executive chef at the lauded DC restaurant Marcelʼs, to create an appetizing and neutropenic dinner.
The foundation of a neutropenic diet is eating foods that lower the risk of infection on the immune system. The coriander and fennel encrusted wild Alaskan salmon with a citrus emulsion that Dr. McGrail and Chef Wiedmaier prepare satisfies the requirements of a neutropenic diet without sacrificing taste or quality. The salmon provides a hearty helping of Omega-3, an essential fatty acid that reduces inflammation, a cancer growth stimulant. Dr. McGrail also explained that the coriander that flavors the salmon is beneficial to diabetics, as it lowers blood sugar levels.
